I’m pretty smitten with this punch. But don’t be mistaken; even with this gorgeous rosy pink color, it’s not a super sweet drink. This refreshing mixture of watermelon juice, gin and mint scream all things summer.
Why should I take the time to make a batch cocktail?
A cocktail that takes care of all of the bartending duties for me is music to my ears, even more so because it can be made a day ahead of time. Anything that I can do to cut down on prep time and serving at a party is always high on my list. Making these drinks ahead of time lets me enjoy the party with my friends instead of playing bartender.
Plus creating a specialty cocktail for any party is a great little touch to make your gathering more personal and make your guests feel special. It’s always fun to have a new drink for your friends to try and then have them switch to beer or wine.
How to make watermelon juice.
Who knew that making your own watermelon juice was so easy? Not me, that’s for sure. Pop it in a blender, strain the pulp out with a fine-meshed sieve, and you are in business. A good blender makes it even easier. Now I know not everyone can splurge on a top-tier blender, but I highly suggest you save up your birthday gift cards because they make a huge difference in how quickly you can make your own juice.
I own Blendtec and love it, but many people are also thrilled with their Vitamix blenders. They do a much better job of tackling rock hard items like ice and frozen yogurt cubes and are able to make quick work out of anything you need to blend.
What kind of alcohol can I use in this punch?
I make this batch cocktail with gin. Don’t worry, if gin isn’t your thing, vodka would be fabulous as well. Need a non-alcoholic version? No worries; just omit the alcohol altogether.

Fresh watermelon juice:
- 1/2 of a personal sized watermelon, cut into chunks
- 4 cups fresh watermelon juice
- 12 springs fresh mint
- 1 cup freshly squeezed lemon juice
- 1 cup simple syrup
- 2 cups gin
To make the watermelon juice:
- Add watermelon chunks to blender and blend until liquified. Pour juice through fine meshed sieve to remove solids.
To make Punch:
- Add mint to a tall pitcher and muddle to release the oils. Pour in watermelon juice, simple syrup, lemon juice and gin. Stir to mix. Pour over ice and serve.
Keeps in refrigerator for 2-3 days.
