    Why you'll love this recipe

✔︎ It’s balanced. The tart grapefruit juice balances out the bitter Aperol and the Prosecco. A splash of of sparkling water make it nice and light.

✔︎ It’s lower in ABV. Adding additional juice and sparkling water to this drink make it a lighter cocktail than your typical Aperol Spritz.

✔︎ It’s pretty. People eat and drink with their eyes and this gorgeous cocktail is the perfect finishing touch to a brunch table.

✔︎ It’s easy to make one or a pitcher. Just need a few cocktails? Buy the small bottles of Prosecco at the store. They contain the perfect amount for 2-3 cocktails without having to open a big bottle of Prosecco.

    Ingredients & Substitutions

You only need 4 ingredients for this easy brunch cocktail.

Bottles of prosecco, grapefruit juice aperol and grapefruit sparkling water.

    Ingredient Notes:

Aperol: Aperol is an Italian apertivo that is bitter in flavor and balances with the juice, prosecco and sparkling water for a refreshing cocktail.

Prosecco: We love to buy the little bottles of prosecco for these to make one or two at a time without wasting a big bottle of bubbles. Want an even lighter drink? Skip the Prosecco all together and just use the grapefruit sparkling water.

Grapefruit Juice: Freshly squeezed juice is best for cocktails.

Sparkling Water: Don’t have grapefruit sparkling water on hand? Use club soda, lime sparkling water or plain Pellegrino in its place.

    Expert Tips

✘ Start with cold ingredients to get the drink cold quickly. Cold cocktails are the best cocktails. Plus your ice won’t dilute it as quickly.

✘ Use a pretty glass. A pretty stem dresses the drink up and makes an ordinary cocktail extra special.

✘ Don’t forget the garnish. The grapefruit slice is the finishing touch that takes your cocktail to the next level. The small details make a huge difference in appearance.
