Ingredient Notes
Oatmeal: Use Old fashioned oats (not quick oats) to get the best texture.
Eggs: Eggs make the oatmeal fluffy. Don't skip them.
Brown Sugar: Dark brown sugar gives the oatmeal a rich, caramel flavor with just enough sweetness. Light brown sugar can be used, but the flavor won't have as much depth.
Blueberries: Fresh or frozen can be used. If using frozen berries, there is no need to thaw them before adding to the recipe.
Instructions
Making baked oatmeal takes just a few minutes to prep before baking away in the oven.
1. Add the oats, brown sugar, salt, baking powder, and cinnamon to a medium bowl.
2. Stir to combine and set aside.
3. In another medium bowl, add milk, eggs and vanilla.
4. Whisk until eggs are fully incorporated.
5. Add oatmeal mixture to milk mixture and stir to combine.
6. Add melted (and slightly) cooled butter to the bowl and stir to combine.
7. Add the blueberries and stir gently to combine.
8. Pour oatmeal into a greased 2-quart baking dish and bake in the oven for 45-55 minutes at 350°F.
FAQs
Eggs bind the oatmeal together. Using 2 eggs makes this oatmeal both creamy and fluffy for the best texture!
You will get great results with fresh or frozen blueberries. Frozen blueberries may make the oatmeal a little more "blue" in color but will still taste great. Do not thaw the blueberries before baking if you are using frozen berries.
It's easy to reheat baked oatmeal in the microwave and it only takes a few minutes. Add a couple of tablespoons of milk when you are reheating and stir it before serving to get a super creamy texture.
Expert Tips for the Best Baked Oatmeal
✘ Use old-fashioned oats, not quick oats, for the best texture. Quick oats tend to get mushy when baked while old fashioned oats hold together better.
✘ Get creative with your toppings! Maple syrup, milk, and toasted nuts are a few of our favorites!
✘ Don't have any blueberries on hand? No problem! Simply add 2 cups of another fruit (peaches are a great option) or omit it entirely and still get oatmeal that is packed with flavor.

Loved it! Definitely will make again!

This is wonderful. I used almond milk and omitted the butter. I also used thick cut oatmeal because it is what I buy. I will cut back on the sugar next time. I am definitely making it again.
