Instructions
Place a large sheet pan in the oven and preheat to 200°F. Preheat griddle to 375°F (or preheat a skillet over medium heat).
In a 9x13"casserole dish, whisk together the eggs, half & half, flour, maple syrup, cinnamon and salt. The dry ingredients may not fully mix, but that's fine.
4 large eggs, ¾ cup half & half, ¼ cup all-purpose flour, 2 tablespoons maple syrup, 1 teaspoon vanilla extract, ½ teaspoon ground cinnamon, Pinch kosher salt
Dip bread slices into the custard mixture for about 30 seconds per side. Place soaked bread on the hot, lightly greased griddle. Cook for 4-5 minutes or until golden brown. Flip and cook until golden on the other side. Remove french toast from griddle and move to the preheated sheet pan in the oven.
8 slices croissant bread,
Repeat with remaining slices of croissant bread. Serve immediately with more maple syrup, powdered sugar, Greek yogurt or whipped cream, berries or toppings of your choice.
Notes
A few ingredient notes:
Half & half: You can also substitute whole milk or heavy cream.
Croissant bread: Use day-0ld brioche for a similar flavor.
Tips for the best Croissant French Toast:
Use Day-Old Bread: Fresh bread gets too soggy. Let croissant bread slices sit out for a few hours to dry.
Don’t Oversoak: A quick dip prevents sogginess.
Use Medium Heat: Ensures a crispy outside while keeping the inside soft.

Freezing instructions:
Cool completely and freeze in a single layer on a sheet pan. Place frozen slices in a freezer bag and remove the excess air before sealing. Reheat in the toaster for a crisp texture. Use within three months of freezing.
