Instructions
To make the vinaigrette:
Place the lemon juice and white wine vinegar in a small bowl and whisk in olive oil to emulsify. Season to taste with salt and pepper.
To make the salad:
Place the arugula in a large bowl. Pour desired amount of dressing on top and toss to coat. Add grated Parmesan and toss to mix. Add shaved Parmesan to top and serve immediately.
