Line a 13 x 9 pan with parchment paper and set aside.
Butter inside of a deep sauce pan with 1 tablespoon softened butter. Add sugar, evaporated milk and salt. Stir to combine. Heat over medium high heat until boiling, stirring constantly. Once mixture comes to a rolling boil, reduce heat to medium and continue to boil for 4 minutes, stirring constantly.
Remove from heat and stir in chocolate chips, marshmallow and mint extract. Pour mixture into bowl of stand mixer and beat for 3 minutes or until mixture loses its gloss and becomes thick.
Immediately pour fudge into prepared pan and top with crushed cane canes. Chill for 2 hours or until set.
