Preheat oven to 350 degrees, grease and set an 8 or 9 inch square baking dish aside.
Place fruit in a medium bowl and sprinkle with cornstarch and sugar. Stir gently to combine and let sit until topping is made. Adjust sugar levels according to the sweetness of your peaches.
8 cups sliced peaches, 2 tablespoons cornstarch, ⅓-½ cup sugar
TO MAKE TOPPING:
In a small mixing bowl, place egg, flour, sugars, cream and melted butter.
1 large egg, 1¾ cups flour, ¼ cup sugar, ½ cup brown sugar, 1 tablespoon cream, 8 tablespoons melted butter
Using a fork, combine until the mixture is the texture of coarse meal.
Pour the fruit mixture into the pan and sprinkle crumble topping evenly over the top of the fruit mixture.
Bake for 40 minutes or until browned and bubbling. Let sit for at least 15 minutes before eating.
Serve with ice cream if desired.
Notes
Make sure your fruit is sliced in similar sizes for even cooking.
Feel free to add in berries or another fruit with the peaches for additional color and flavor. Blueberries are one of my favorite add ins.
Fill your baking dish with enough fruit! This recipe is forgiving, so don't worry about adding too much fruit. The fruit will cook down as it bakes, so if your baking dish isn't full enough, don't be scared to add more!
If you are looking for a more pie like texture to the crumble topping, swap the melted butter and use cold butter instead.
