Place sliced fruit in a glass container, add rum and cover. Refrigerate for 324-48 hours. Strain fruit and store infused rum in refrigerator until ready to use.
1 cup white rum, ½ cup sliced strawberries, ½ cup peeled and sliced kiwi
Remove the fruit from the rum and discard. Refrigerate the rum until ready to use.
To make the Strawberry-Kiwi Daiquiri:
Add rum, lime juice and simple syrup to an ice dilled shaker.
Shake to combine and strain into 2 ice filled glasses. Serve immediately.
Garnish with kiwi slice if desired.

The rum can be infused for anywhere from 24 hours to 4 days. The longer you leave it in, the more pronounced the flavor is. It tastes great after 24 hours but will get a little more concentrated the longer it sits.
Once the alcohol is infused, remove the fruit from the container and store it in its original bottle or a clean glass jar in the refrigerator. Infused rum will last for 3 months when stored properly in the fridge.
To infuse a whole bottle: Add 3 cups of sliced fruit to a large jar and add the contents of the bottle of rum. Let the rum sit in the refrigerator for 36-72 hours and then strain it into the original bottle for easy storage.
