When did life get so busy? My friend, Sarah, and I were talking the other day about how we are exhausted by the time Saturday night rolls around. All of the running around from the week – work, school and family commitments – makes me want to simply collapse on the couch. But Kevin and I still try to find time for date night in the midst of all the craziness. We just enjoy it at home instead of going out. Actually, it’s really nice. We take time to make dinner a little extra special, catch up on some recorded TV and enjoy a cocktail together. This is our latest date night cocktail creation: the Kahlúa French Vanilla Cooler.

Since we’re trying to not eat dessert every night (my jeans thank me!), this Kahlúa French Vanilla Cooler is an ideal after-dinner drink. Vanilla-flavored Kahlúa blends smoothly with creme de cocoa, vodka and a shot of coffee to create a rich-tasting sipper that is delightful both on the rocks or straight up. Now don’t get me wrong; Kevin and I love going out for date night, too. Checking out new restaurants is one of our favorite things to do. But sometimes having a low-key night at home is just what we need. A restaurant-quality cocktail like this Kahlúa French Vanilla Cooler makes the evening seem less ordinary and more indulgent. Ingredients

  • 1 1/2 parts Kahlúa French Vanilla
  • 1 part creme de cocoa
  • 1/2 part Absolut© vodka
  • 1 part freshly brewed coffee, cooled

Instructions

  1. Pour all ingredients into a cocktail shaker filled with ice. Shake vigorously and pour into glass filled with ice. Serve immediately.
