Add some color to your holiday brunch cocktails with this pretty in pink Ginger Grapefruit Prosecco Cocktail.
We're hosting both families for Easter brunch this year, which is wonderful for me because I love an excuse to indulge in anything breakfast-related. And since we're celebrating Easter, I wanted to kick off the festivities with a fun brunch cocktail. I was looking for something more unique than your typical options (mimosas, bellinis) when I stumbled upon this Ginger Grapefruit Prosecco Cocktail. It was truly love at first sip.
Ginger and grapefruit are unlikely friends because they both have such strong flavors, but they marry together beautifully in this cocktail. The spice of the ginger liqueur is a tasty partner to the tangy grapefruit juice, and both are gently mellowed with the bubbly topping of prosecco. And the color! It's like a refreshing breath of spring air after months of staring at the drifts of white (and now dirty-white-brown) snow in my yard. Soooo pretty!
Keep this Ginger Grapefruit Prosecco Cocktail recipe handy as it is the PERFECT cocktail to toast any occasion in spring - Easter, graduation, wedding shower, etc. Or, if you're like me, why wait for an occasion to kick back and enjoy this beauty?

Do you think that you could replace the ginger liqueur with ginger beer? Have bunch of grapefruits I need to eat and happen to have ginger beer.
Hi Libby, I'm not a huge ginger beer fan, so I haven't used any other ginger-type substitutions for the liqueur. If you give it a go, stop back and let us know how it turns out!
I stopped by because of your name, and stayed to pin the drink.
So glad you did!
