It’s already August…how the heck did that happen? It seems like I’m still waiting for the heat of summer to arrive. I cannot believe that back to school is only weeks away. August is going to fly by waaaay. toooo. fast! So in an attempt to make the back to school time a little easier, Anna and I have a month full of all things back to school planned for you this August. From healthy, easy lunchbox ideas to quick weeknight dinners and to the most important meal of the day (breakfast!), we have you covered. Let’s kick this off with one of my favorite quick and easy breakfasts, the Easy Breakfast Burrito.
The Easy Breakfast Burrito makes morning time a little easier in my house. Gone are the lazy mornings of summer and back are alarms, schedules and eating on the run. And with that the need to eat breakfast before 10:00. But thankfully, the breakfast burrito is simple, tasty and packed with protein, sure to get your day off to a great start AND keep you full until lunch. Lucky for me, my kids love to eat these (even Greta, who isn’t a big egg fan). Now that’s saying something! I set out all the fixings: pico de gallo, guacamole, salsa, cheese and sour cream and let them go to town filling their burritos. It’s way more fun for them to do it however they want, and, not only do I have a few more minutes on my hands, I’m guaranteed that they will eat it. Pretty much a picture perfect situation, if I say so myself!

- 2 whole wheat flour tortillas
- 3 eggs, scrambled
- pico de gallo
- sour cream
- shredded cheddar cheese
- Place half of eggs in center of tortilla. Top with desired toppings.
- Fold ends in and roll up. Serve immediately with additional salsa, if desired.
