Thanksgiving leftovers look mighty tasty in this Cranberry Brie Grilled Cheese Sandwich.
Thanksgiving leftovers are the best part of the holiday, right? Cold turkey sandwiches while watching football games, warmed up dinner rolls for snacks, slices of pie for breakfast…it’s all fair game. But the cranberry sauce? That’s usually the last man standing. But don’t forget about the cranberry relish when you are hunting in the fridge for goodies. Slather it on some bread, top it with slices of Brie, and you have the fixings for a simple but seriously tasty grilled sammie. In fact, this Cranberry Brie Grilled Cheese Sandwich may well be my new favorite Thanksgiving leftover.

- 2 slices bread
- cranberry relish
- brie cheese, sliced
- Heat skillet over medium heat.
- Butter one side of each of the two slices of bread. Spread cranberry relish on the non-buttered side of one slice and top with brie slices. Place buttered side of bread down in skillet and top with other slice, buttered side facing up. Cook until lightly toasted and repeat on other side. Allow to cool slightly before eating.
