It’s no secret that cheese and appetizers are two things very near and dear to my heart, especially when they are combined into one delicious savory appetizer. These goat cheese filled peppers, fresh feta spread and parmesan salsa all make a regular appearance in our house. Although ooey gooey cheese is my hands-down favorite (like this warm gruyere, bacon and caramelized onion dip), those dips require me to plan ahead a little when it’s on the menu. But this Baked Fontina Dip can be slathered on crusty bread in less than 10 minutes. Instant gratification.
What kind of fontina cheese should I use in this dip?
Any other Fontina cheese fans out there? This Baked Fontina Dip combines a couple of my favorites. I started with some Fontina Valle d’Aosta, the original Fontina cheese from the d’Aosta valley (which you can find in your fine cheese department). This Fontina can be pretty pungent in flavor which is why I paired it with its milder cousin from Northern Italy, Fontina Fontal. Both types of cheeses melt beautifully and when combined with garlic, herbs and olive oil make an amazing appetizer.
Add some crusty bread and a glass of wine, and you have created an impressive masterpiece that will wow your friends and family in no time flat.

- 7 ounces Fontina cheese, rind removed and cubed
- 1 garlic clove, minced
- 1 teaspoon fresh rosemary, chopped
- 2 teaspoons fresh thyme, chopped
- 1 - 2 tablespoons olive oil
- Kosher salt and freshly cracked black pepper
- Fresh thyme for garnish
- Preheat broiler in oven.
- Place cubed cheese in a cast iron or oven safe dish. Sprinkle with herbs, garlic, salt and pepper. Drizzle olive oil over top.
- Place under broiler for 5 minutes or until cheese is melted and browned. Serve immediately with crostini or crackers.
I used 2 different Fontina cheeses in this recipe: Fontina d'Aosta (pungent and earthy) and Fontina Fontal (nutty and mild). Use whatever combination you like best.
