Mexican Stuffed Acorn Squash Who is sick of winter?

I’m pretty sure I heard a virtual chorus of “Meeeeeeeeee!” coming through loud and clear. (Or maybe that was just me yelling very loudly??) Regardless, I second, and third, that sentiment. Thank goodness for the comforting foods of winter (and pictures of warm, sunny locations on Pinterest). Without those things, I’m not sure I’d make it to spring. 

We’re guest posting for our friend, Julia, at A Cedar Spoon today.   2. Seriously, it’s all about survival at this point with the winter. I think this stuffed squash could get me through, though. :) Heading over for the recipe!

  3. I am completely obsessed with squash…but I have yet to try acorn squash! I know anything cheesy and mexican is the bomb…so with squash? YES
