I always have so much fresh fruit on hand during the summer that I swear I could feed an army. This summer, that army happens to be made up of my 2 children. Ever since school has gotten out, the grocery bill has quadrupled, and everything disappears before I know what happened. Who else hears, “Mom, there’s nothing to eat!”? So in an attempt to not go to the grocery store every day, I may have gone slightly overboard with my fruit purchases. But never fear, this Fresh Fruit Salsa took care of the abundance in a hurry.
The recipe is super forgiving. Just use whatever fruit you have on hand. Next time I’m making it with fresh peaches and sweet cherries! Ingredients
- 2 kiwis, diced
- 1 pound fresh strawberries, diced
- 1 cup pineapple, diced
- 2 cups blueberries, sliced in half
- 2 tablespoons sugar
- Juice of half of lime
- Mint leaf for garnish
- Cinnamon Sugar Pita chips, for dipping
Instructions
- Combine chopped fruit in a medium bowl. Sprinkle sugar and lime juice over and let sit for 15 minutes.
- Garnish with mint and serve with Cinnamon Sugar Pita Chips
