Anyone else enjoying a wet and cool summer? 

Actually “enjoying” is not the right word. Enduring, perhaps? 

I would have thought that after our *freakishly* cold winter, we would have earned a reprieve from crazy, unseasonal weather. 

Guess not. 

There is widespread flooding throughout Minnesota, which puts a major damper on some of our favorite summer activities: 

Boating and tubing?  Off limits on many lakes because of no-wake zones. 
Hitting the greens? Stretches of local golf courses have been underwater since June. 
Dropping a line in the water? Our nearby fishing dock is closed because the path that leads to it is flooded. Grrrr. 

But the closure that has had the most impact on our lives is a little closer to home: our fire pit. It’s pretty tough to roast s’mores when your fire pit is filled with standing water. So I did what any self-respecting s’mores lover does when faced with such dire circumstances; I baked them. Grab your napkins as these Gooey Baked S’mores Bars are totally worth the stick factor.

Summer has officially arrived! The kids just finished school and summer vacation begins today. I adore having Greta and Charlie home and purposefully have not scheduled much for the kids this summer. This was a recipe that almost didn’t happen. I had a heck of a time trying to translate these traditional cookies into bar form. My first go completely stuck to the pan. (I’m talking super-glued to the pan.) I lined the pan on my second attempt and swapped coconut oil in place of the butter to keep them from sticking. Simply put, that was a greasy disaster. Fortunately, the third time was the charm. The name might be a mouthful – Salty Caramel Pecan Oatmeal Cookie Bars – but there is no mistaking the goodness here.

Now my baby days are long over, but nothing gets me more excited than a new little baby that I can cuddle with to get my baby fix. Counting all of those little fingers and toes? Adorable! And the little rolls around the ankles and wrists? I die. (Somehow so much cuter on a little baby than me.)

I remember when Greta was born. There’s really nothing like having a little baby girl. Before you know it, your house is inundated with all things pink. Our friend Stephanie from Girl Versus Dough is expecting her first baby (a girl!) in May, and we were tickled to be invited to create a recipe for her virtual baby shower. And since it is now officially spring and the start of rhubarb season, I combined two of my loves (babies and rhubarb) in these Strawberry Rhubarb Muffins to celebrate the upcoming arrival of Steph’s beautiful pink bundle of joy!
