Apple season is right around the corner, and let me tell you, this makes my husband a happy man. Kevin could eat all the apple things, all the time. So naturally I’m always looking for new ways for him to get his apple fix. And that means I’ve got a few tasty treats coming your way. Without further ado, I’m officially kicking off apple season with these warm-from-the-oven Apple Hand Pies.

At the beginning of zucchini season, I’m all over this simple but tasty Grilled Zucchini. We then move on to more using zucchini in more inventive ways, like in these Zucchini Feta Fritters. I almost always make a couple loaves of Zucchini Bread with Craisins at one time to throw in the freezer for the middle of winter. But then the family gets zucchinied (is that a word?) out, and I need to get creative with our zucchini intake.
I’ve never been a big fan of hiding vegetables in my kids’ food. I always want them to know what they are eating because it’s important they learn how to lead a healthy lifestyle. But sometimes a girl has to do what a girl has to do. And that is where the Chocolate Zucchini Muffins come into play.

I would have thought that after our *freakishly* cold winter, we would have earned a reprieve from crazy, unseasonal weather.
There is widespread flooding throughout Minnesota, which puts a major damper on some of our favorite summer activities:
Boating and tubing? Off limits on many lakes because of no-wake zones. Hitting the greens? Stretches of local golf courses have been underwater since June. Dropping a line in the water? Our nearby fishing dock is closed because the path that leads to it is flooded. Grrrr.
But the closure that has had the most impact on our lives is a little closer to home: our fire pit. It’s pretty tough to roast s’mores when your fire pit is filled with standing water. Summer has officially arrived! The kids just finished school and summer vacation begins today. I adore having Greta and Charlie home and purposefully have not scheduled much for the kids this summer. But let’s be realistic; it is always an adjustment for everyone. Gone is the structure of the day and enter the laziness of summer, which is good and bad all wrapped up into one. This was a recipe that almost didn’t happen. I had a heck of a time trying to translate these traditional cookies into bar form. My first go completely stuck to the pan. (I’m talking super-glued to the pan.) I lined the pan on my second attempt and swapped coconut oil in place of the butter to keep them from sticking. Simply put, that was a greasy disaster. Fortunately, the third time was the charm. The name might be a mouthful – Salty Caramel Pecan Oatmeal Cookie Bars – but there is no mistaking the goodness here.
