Have you ever grilled an avocado? I tried it for the first time about a month ago and am now addicted. I don’t know about you, but we use our grill as much as possible in the summer. We have tackled a lot of different things, but this summer was our first attempt at grilling avocados. I love avocado to begin with, but the smoky flavors that come out from a grilled avocado are absolutely delicious. It’s the perfect way to jazz up a BLT sandwich.
The BLT with Grilled Avocado has become a quick dinner staple in our house. Thick, crisp bacon, fresh tomatoes and lettuce from the garden and a good crusty ciabatta are a perfect foundation for the ultimate BLT. Add the grilled avocado and it is A-mazing. The avocado keeps its bright green color when grilled, and and its smoky flavor complements the bacon to a T making it a great condiment for your BLT. Not to mention healthier because you can cut the mayo if you like (or have both like I do. Sometimes more is better.) Add this Danish Potato Salad, and dinner is complete.
Nothing says summer to us like a fabulous dinner al fresco on the patio. I’m ignoring the cooler mornings, the slight crispness in the air and the earlier sunset. I’m hanging on to every last moment of summer I can. And this BLT with Grilled Avocado is a juicy, lip-smacking way to do just that.
A summer sandwich with the tasty addition of grilled avocado.
Recipe type: Main Dish
2 pieces lettuce, washed and dried
1 tomato, sliced
6 pieces thick-sliced bacon, cooked until crisp
1 avocado, pitted and halved
olive oil or grapeseed oil
To grill the avocado:
Preheat grill to medium high heat. Brush avocado halves with olive or grapeseed oil and place directly on grates. Grill for 3-5 minutes or until avocado is charred with grill marks yet not mushy. Turn and grill for 1-2 more minutes. Remove from grill. To make sandwich:
Slice grilled avocado and spread slices on ciabatta bread. Layer with bacon, lettuce and tomato. Serve immediately.
