Does anyone out there actually receive breakfast in bed on Mother’s Day? I think it’s a lovely idea in theory, but it doesn’t work in reality, at least for me. I’m too worried about balancing the tray and spilling all over myself and the sheets to actually enjoy the fact that someone made breakfast for me…is that weird? Maybe. Whatever it is, I’d much rather cozy up on the couch in my comfy clothes, leisurely read the Sunday paper and saunter into the kitchen when breakfast is ready. But if I’m being honest, I have been known to skip the sauntering part and hover near the table when breakfast consists of these super yummy Cheesy Ham and Spinach Egg Cups!
What I love about this recipe is that even the smallest kids can help prepare it as it involves no chopping or dicing. Simply line a muffin cup with ham, sprinkle in some spinach and cheese, crack an egg on top and finish with some salt and pepper. Dad might have to help with cracking the egg and removing the pan from the oven, but the assembly is all kid-friendly. These Cheesy Ham and Spinach Egg Cups are also the perfect recipe to bring along when you visit guests overnight. With just a handful of ingredients, you can treat your hosts to a hot breakfast in no time flat. Add some coffee cake (blueberry, anyone?) and fresh fruit, and you have a perfect “thank you for having us” meal.
Speaking of gratitude and thank you’s, a huge shout out to all the moms out there this Mother’s Day. You rock! I wish you a day full of whatever makes you happy…even if that means breakfast in bed.
