I’m always looking for a new and unique cocktail and love it when I am served one that is a hit with both my husband AND me. See, this really works in my favor. If Kevin loves a drink we have when we’re out, he’ll take the time to perfect it at home. And he does it well. I do the food in our house (except for the grilling), and Kevin does the drinks. Great division of labor – it works for us! Recently, we were fortunate to be invited to a fabulous dinner party at The Dining Studio here in Minneapolis with Philip Dorwart as our chef for the evening. The food, company and location were absolutely perfect. It was a fabulous night with great friends!
We started the evening off with a great cocktail – the Hopeful Spinster. That name alone is enough to make you want to try it, right? This cocktail is full of fresh spring flavors, and I can guarantee that you have never had a combo like it before. For starters, it has Aperol in it, an Italian aperitif, that is very similar in taste to Campari but with half the alcohol. Alone it is very bitter, but mix it with Hendrick’s Gin, simple syrup, muddled cucumber and lime juice, and you have a delicious combination. It screams spring, which is finally making an appearance here this weekend. It’s time for the lawn furniture to come out, the grill to be fired up and to have friends over for cocktails on the patio. We are doing just that tonight, and the Hopeful Spinster is on the menu. If you are looking for a new spring cocktail, look no further. This one is a winner and oh, so pretty to boot! Muddle the cucumber in the bottom of a shaker. Add Aperol, gin, lime juice, and simple syrup. Shake vigorously to combine. Strain and serve in low ball glasses filled with ice. Top each glass with a splash of club soda, garnish with a lime and serve.
